cajun chicken pasta
Ingredients:
- 10 - 12 chicken tenderloins
- 2 cups of water with 2 chicken bouillon cubes
- 1/2 pint of heavy whipping cream
- 1 cup of parmesan
- 1 tbsp of butter
- 2 cloves of minced garlic
- 2 tbsp of cajun seasoning
- 2 diced roma tomatoes (or a can of petite diced tomatoes)
- 16 oz of your preferred pasta (I usually use penne)
- 1 cup of mexican cheese (optional)
Instructions:
- Preheat oven to 350F and start cooking the pasta according to package instructions.
- While the pasta is cooking, heat butter and oil in a frying pan. Add chicken, season with salt, pepper, and a tbsp of cajun seasoning, and cook for about 3 minutes each side.
- While the chicken is cooking, heat butter, water with the bouillon cubes, cream, parmesan, garlic, and 1 tbsp of cajun seasoning in a saucepan.
- When the chicken is done cooking, move to a baking dish (I use a 13"x8" glass dish), pour the sauce in, and top with diced tomatoes and optional mexican cheese (if you want things extra cheesy).
- Bake for about 10 minutes.
- Serve with cooked pasta and enjoy!
