quesadilla
Ingredients:
- Burrito-style flour or corn tortillas
- 1 - 2 handfuls of shredded mexican cheese (I use a blend of monterrey jack, cheddar, asadero, and queso quesadilla)
- Mexican seasoning (cumin, chili powder, and onion powder)
- Mexican hot sauce or salsa (I love Cholula)
- Optional: leftover taco or fajita meats
Instructions:
- Sprinkle a tortilla with mexican seasonings, then place 1 - 2 handfuls of mexican cheese on one side of the tortilla. Pile on any other ingredients you want (hot sauce, salsa, cooked meats, etc.) and fold the tortilla in half.
- Melt butter in a medium skillet over a low flame.
- Place the quesadilla in the pan and cook for about 3 minutes, then flip it cook for an additional 2 - 3 minutes.
- Plate it, cut into triangles, and enjoy!
