taco pasta
Ingredients:
- A 16 oz. box of pasta (I like cavatappi or elbows)
- Half a large white onion, chopped
- 1 or 2 jalapeƱos, chopped
- 1 lb. ground beef
- 2 tbsp. taco seasoning
- A 15 oz. can petite diced tomatoes
- Several handfuls of mexican cheese (I use half a bag of the monterrey jack, cheddar, asadero, and queso quesadilla blend)
- Half a small carton of cream
Instructions:
- In a large pot of boiling water, cook pasta according to package instructions. Drain, return to pot.
- Meanwhile in a large skillet (greased with either cooking spray or butter) over medium heat, cook onion 5 minutes, then add jalapeƱo and cook 2 minutes more. Add ground beef and cook for 6 minutes or until it's no longer pink.
- Drain fat and return to skillet.
- Add taco seasoning, canned tomatoes, cheese, and cream. Melt over a low heat, stirring occasionally.
- Add cooked pasta and mix it up until completely combined.
